fixed composer check 
- Dropped `tests` folder references (tests are not there)
- Dropped `@test` reference from `composer check` (phpunit is not
depended on, tests are absent)
- Ignored `stubs` folder (cannot really be checked by psalm) in
`psalm.xml`
